Emma Brennan is currently completing the MSc in Functional Foods and Product Development programme in the Department of Biological Sciences at University of Limerick. We caught up with Emma to ask about the programme and her recent visit to Cagliari in Italy to learn how to produce functional foods, nutraceuticals and cosmeceuticals.

 

Why did you choose to study at University of Limerick?

I pursued my undergraduate studies in Food Science and Health at UL for four years. My interest in science has been a constant throughout my academic journey, and I've always been fascinated by the role of nutrition in our lives.

Why did you choose the MSc in Functional Foods and Product Development?

I chose the MSc in Functional Foods because I firmly believe that our food choices significantly impact our future health and quality of life. I am passionate about developing and exploring new or existing foods with added health benefits to promote longevity.

What are you enjoying most about the course?

What I enjoy most about the course is the hands-on experience it offers. I particularly relish the practical aspect, which involves characterizing and analysing bioactive compounds in food. My current research project, creating a vegan hydrogel jelly from blackcurrant press cake, is an exciting challenge that I am thoroughly enjoying.

You recently went on an Erasmus+ trip to Cagliari in Italy as part of the programme, can you describe how this experience benefited your studies?

Recently, I had the incredible opportunity to step out of my usual focus on functional foods and dive into the fascinating world of cosmeceuticals during an Erasmus programme in the beautiful city of Cagliari. During this programme, I created some innovative skincare products using bioactive substances derived from Agrifood waste, aimed at delivering both aesthetic and beneficial effects. Here are some of the highlights. Working on these products allowed me to explore the synergy between food science and cosmetics. I am grateful for this enriching experience and looking forward to applying these new insights into my work!

Can you tell me about your UL experience, what is student life like here?

My experience at UL has been fantastic. The campus is vibrant, and both the students and staff are incredibly friendly and supportive.

How would you rate the level of support as you have progressed through the programme, is there anything that stands out?

The level of support throughout the MSc programme has been exceptional. There's an open-door policy with all our lecturers, and everyone is willing to help at any time.

 What are your plans after you graduate?

After I graduate, I plan to secure a role in research and development with a company that shares my values and goals.

What advice would you give to people considering coming to UL and completing the MSc in Functional Foods?

My advice to anyone considering coming to UL and completing the MSc in Functional Foods is simple: Just do it! This year has flown by, and I've enjoyed every minute of it. The modules I've taken have significantly developed my professional attributes and skills. I'm excited to apply these new skills at the industry level to make a real difference.
